Malaysian immigrant builds life as a baker in Kinmen

Growing up in Malaysia, Soh Jia Seng moved to Kinmen in 2014 for university. After graduating, he opened a bakery with his wife, Hung Yu-ting. All their bread is made fresh daily using minimal oil, salt and sugar for a healthier option. With the help of startup resources for young business owners, the small shop quickly gained a reputation and became a famous bakery in Houpu 16 Creative Park.

This is the Houpu 16 Creative Park in Jincheng Township. Here amid traditional Minnan architecture, you’ll find many young entrepreneurs trying to make a start. One among them, Soh Jia Seng is making fresh bread to be sold that day.

Normally we start at 6 a.m., but if there is a special order we will start around 4. One time we made almost 700 salted butter rolls in one day. That was a record.

Soh’s wife Hung Yu-ting is excellent at developing creative ideas and understanding what their customers want. The pair make bread fresh daily, using less oil, salt and sugar and without additives so that their customers can eat baked goods that are both healthy and delicious.

My favorite is our caterpillar cream bread. Other stores’ caterpillar breads always have a lot of glazing on top. My stomach actually can’t handle a lot of bread, but I really like it! My husband makes it without the glaze, and he adjusted the cream filling so that it’s healthier.

Soh began by making cinnamon rolls. His parents-in-law loved them and encouraged him to open a bakery. After three years of hard work, the shop really started to succeed. After more and more customers became regulars, Soh felt a deep sense of accomplishment.

Today he bought a salted butter roll, and I know I will see him tomorrow, the day after tomorrow, and the day after that. That’s what makes me the happiest.

After graduating high school, Soh wanted to study abroad, so he came to Kinmen for university. Ten years later, with a wife and child as a part of his life, Kinmen is like his hometown.

I like the slower pace of life here. Even though I’m really busy, I like this kind of environment. It makes people feel relaxed whenever they have time off.

The storefront of an old building was the start of their bakery, which soon became a place where magic happens. The occasional delivery changes their working style, and when they’re tired, they can visit the beach at any time.

I really want to open a bakery and coffee shop. So, as I gain experience running this first shop, I’m always thinking about opening an even bigger one. I can start with my own breads and sandwiches and then add a drink menu. Customers can enjoy a snack and beverage in the cafe or take it to go.

From Malaysia to Kinmen, Soh is forging his own path in life, constantly moving forward.

大馬男孩手作麵包創業 戀戀金門成新住民

來自馬來西亞的蘇傑勝,103年到金門就讀大學,畢業後跟太太一起創業,經營麵包烘焙坊。店裡麵包當天現做,少油、少鹽、少糖,走健康路線。在青年創業資源輔導下,小店逐漸闖出名號,成為後浦十六藝文特區的明星手作麵包店。

這裡是金城鎮,後浦十六藝文特區,傳統的閩南建築裡,許多青年創業正在萌芽。來自馬來西亞的蘇傑勝,正準備等等要上架的麵包。

"平常是六點開始做,如果有訂單的話會四點就開始做,最高的紀錄,鹽之花奶油捲一天就做了600快700顆"

蘇傑勝的太太是店裡的發想王,提供許多消費者想法,夫婦倆堅持麵包當天現做,少油、少鹽、少糖,沒有其他添加,讓顧客吃到健康、沒有負擔的美味麵包。

"我最喜歡這款奶酥毛毛蟲,因為我們外面買到的毛毛蟲上面都有好多糖霜,其實我腸胃不太能吃麵包,我又想要吃,他就把糖霜去掉,裡面的奶酥稍微做調整一下,就可以吃得比較健康一點"

當年因為試做肉桂捲,岳父、岳母大力稱讚,促成他創業開店,努力了三年,小店終於開花結果,每每看到主顧客回購,就成就滿滿。

高中畢業後,因為嚮往出國唸書,蘇傑勝來到金門就讀大學,一轉眼,十年過去,老婆、小孩加入他的生活拼圖,而金門更像是他的故鄉。

"我比較喜歡這種慢步調的生活,雖然我每次都很忙很忙,但是喜歡這種環境,讓人覺得休假的時候很放鬆"

古厝裡的店面,是創業起點,獨處的烘焙空間,是魔法工作室,偶爾麵包外送,可以調劑一成不變的工作模式,累了想放鬆,隨時可以跟海灘邂逅。

"我想要開一間麵包咖啡廳,所以這裡就當作慢慢累積經驗,想要開一間更大的店,可以用我自己做的麵包,自己做的三明治,再搭配一些飲料,去呈現給客人,可以內用外帶都可以"

從馬來西亞到金門,蘇傑勝走在自己的人生藍圖上,不斷往前推進。
