Specially designed thermometers key in MOE program to improve rural school lunches

By using the latest technology, the Ministry of Education is making sure that children in rural areas can get a warm meal that’s just as good as what their peers in the city eat. One of the technologies is an online platform that collects data through a variety of specially designed food thermometers. The system was developed in collaboration with a research center at National Cheng Kung University. It provides detailed data of every step of the process, from cooking the food, to transporting, to delivering the meals to schools around Taiwan.

To ensure food safety, the Ministry of Education’s plan uses two different thermometers to test the food’s temperature. One has a long probe and is used to check for food doneness. The other, used during deliveries, has a shorter probe to prevent contamination when monitoring the temperature of the food.

You have to take a temperature reading of the very center of the food, which is why the probe is pointed. That allows nutritionists or the people in charge of lunches to check the internal temperature of the meals, to get a reading from the middle. Then, there is this thermometer with a shorter probe. It’s used after the food is cooked, as we wouldn’t want anything to touch the meals and create a risk of contamination.

During delivery, the meals are tracked with a GPS system. Data on the food’s temperature and the location of the delivery van is updated every 30 seconds and uploaded to a smart platform. This allows school nutritionists to have a full grasp on the food’s temperature, lowering any chances of food safety problems from arising.

This ensures that the food is safe. The most important thing is that children in rural areas can also enjoy a piping-hot meal.

The Ministry of Education hopes that through its school lunch upgrade program, all students in Taiwan can get a tasty warm meal, no matter where they are.

提升偏鄉用餐品質! 教部攜手成大"學校中央廚房計畫"

為了讓偏鄉每位學童都能吃到熱騰騰的午餐,教育部與成大人工智能數位轉型中心合作,歷時四年時間規劃出"熟食運送暨食安管理系統",將溫度監控設施具體化,把餐食溫度和行車路線傳送平台,中央可透過網路即時掌控資訊,確實執行"偏鄉學校中央廚房計劃",實踐"縮短城鄉差距提升偏鄉用餐品質"的核心價值。

為了確保食的安全,教育部採用了兩種智慧溫度感測器,來監測餐食溫度,起鍋使用長針的熟食起鍋溫感器,以確保食物有煮熟。運送過程,則使用短針的熟食運送溫感器,以避免監測溫度時,接觸食物導致污染。

“因為要量中心溫度,所以你可以看到頭是尖的,讓營養師或午秘(午餐秘書) ,能夠把這個感測器插入到食物的中心,量到食物中心溫度,那這個短的溫感器,本身不希望在起鍋之後,再有任何的物體接觸到食物,產生感染的風險”

運送過程中,司機還會帶上一台GPS監控裝置,所有的餐食溫度和行車路線,都會以每三十秒一次的頻率,傳送到「智餐平台」上,讓學校營養師可以監控餐食溫度 ,減低食安問題。

教育部期盼,透過偏鄉學校中央廚房計畫,無論距離有多遠,讓孩子們吃得一樣好。
