Fruit juice expert and nutritionist weigh in on best and worst fruit milks

A glass of fruit milk is a very popular pick-me-up. Juice vendors across Taiwan offer all kinds of fruits blended with milk. But did you know that some fruits are objectively a bad match for milk? Which fruit milks are the best? We spoke to a juice expert and a nutritionist to hear it from the pros.

Slices of papaya go in the blender, then milk. They both have sweet and silky flavors. But not many people know how well a sugar-apple goes with milk. These members of the public tried it and were won over.

This juice vendor listed the many fruits that go great with milk.

Apart from papaya and avocado, there’s also fig milk, and cocoa beans. Cocoa beans lower blood pressure, lipids and sugar, so I think cocoa beans are perfect for today’s health trends.

Sweet fruits go well with milk in general. Sugar-apples are high in vitamin C, bananas are high in potassium and low in sodium – great for lowering blood pressure. Papaya is good for the heart and avocado is an antioxidant. But milk isn’t as forgiving as it seems. This juice expert warned that sour fruits like kiwi fruit, pineapple and oranges are a no with milk. We asked a nutritionist why.

Some fruits are more acidic, and they have enzymes that break down protein. That includes papaya, kiwi and pineapple. They will react with milk and cause it to curdle, or even to go rancid.

This nutritionist recommends drinking fruit milk as soon as it’s made, so the nutritional value is at its highest and the flavor at its best as well.

很多人應該喝過木瓜牛奶,牛奶看似百搭,但其實不是什麼水果都能加。酸度太高的水果,像是奇異果、鳳梨、柑橘類,會分解牛奶中的蛋白質,產生凝固甚至會變苦。誰是牛奶好朋友,我們一起來了解。

木瓜切塊放進果汁機,再加入牛奶,香甜滑口最對味。但比較少人知道,原來釋迦也能加牛奶。實際打一杯,民眾喝過都說讚。

果汁業者也講了幾個和牛奶絕配的水果。

“除了木瓜、酪梨,再來是無花果牛奶、可可豆,因為可可豆是降三高,以現在養生來講,我覺得可可豆非常適合。”

甜度高的水果最對味,釋迦富含維生素C、香蕉高鉀低鈉降血壓、木瓜還能顧心臟,酪梨還抗氧化。雖然牛奶看似百搭,但果汁店老闆特別提醒,可不是什麼水果都能加,像是奇異果、鳳梨、柑橘類,就不適合跟牛奶放在一起。營養師也指出關鍵。

“有些水果酸度比較高,並且含有蛋白質分解酶,像是木瓜、奇異果、鳳梨這類的,就會和牛奶產生作用,會變成凝固、甚至變苦。”

營養師強調,果汁牛奶要趁新鮮喝完,不但營養更完整,口感也更加美味好喝。
