Taoyuan banh mi restaurant serves up an authentic Vietnamese taste

Now, to all our Vietnamese viewers, here’s one for you. A banh mi restaurant in Taoyuan is gaining rave reviews. The chef, Gandan, started the restaurant in Guishan District, so locals could enjoy the classic Vietnamese dish properly. Despite the pandemic, he’s carved out a niche, with solid ingredients and commitment to the traditional recipe. Vietnamese residents of Taoyuan say his banh mi is pretty close to the real deal. What greater compliment could they give? Let’s head to Taoyuan now.

Baguettes go into the oven, to be re-baked until crispy outside and soft inside. They’re cut open and filled with pork pate, authentic Vietnamese ham, cucumber, and coriander.

Even the eggs are fried in a special way. They go into the pan with cold oil, which is heated up slowly to fry the egg. These banh mi are a solid 7 centimeters thick! Lots of Vietnamese people come here to enjoy an authentic flavor from their homeland.

I think Vietnam feels a bit like Taiwan did when I was born. When I go to the Vietnamese countryside, I see lots of things that give me deja vu. I also see the ways in which it is developing really fast. It’s an enormous contrast. It has a very good side. The people are also very good-hearted.

After leaving his career as a police officer, Gandan had his heart set on starting his own business. He didn’t think too much about leaving himself a get-out route, he says. He just wanted to give fellow lovers of Vietnam a place to enjoy the real culinary deal, but in Taiwan. Not long after he started the business, COVID-19 hit. Prices for ingredients like eggs and coriander went flying sky-high. But through word of mouth and the patronage of the Vietnamese community in Taiwan, he’s maintained a stable business.

Migrant workers have it very tough, and so do foreign women who move here to marry a Taiwanese man. They may have to adapt to a lot of different national cultural habits and language habits. It’s all very hard work. I try to treat them with extra kindness, like, chatting with them as much as I can. I think we do have the Vietnamese atmosphere here, maybe. Perhaps they feel like I kind of understand Vietnam.

Gandan is running a business, serving up good food, and making cross-cultural friends – all in a day’s work. For Vietnamese neighbors, he provides a comforting reminder of home, on days when living in a foreign country feels tough.

熱愛越南! "甘單哥"警察退休創業開越南麵包店

在台灣也能品嚐到道地越南味!桃園龜山有間越南麵包店,老闆「甘單哥」是美食旅遊部落客,因為熱愛越南,不僅經常前往自由行,還為了讓越南人吃到越南的國民美食而開店,也嘉惠到附近工業區的越南移工,成功創業。

將麵包放進烤箱,回烤到外酥內軟,再剖半抹上豬肝醬,鋪上道地的越式火腿,還有黃瓜連煎蛋都要很講究,先用冷油鋪底,再開火慢慢煎熟。一份厚達7公分的越南麵包,吸引許多在台灣的越南民眾,前來回憶家鄉味。

“滿道地的,那個材料很實在。放兩三個小時、半天都還很脆。”

“(味道)跟越南很像。”

除了移植越式口感,牆上一張張景點照片,更是老闆到越南的攝影紀實,1974年生的老闆甘單哥,經常和家人到越南自由行,撰寫旅遊部落格。

“我覺得越南有一點台灣我出生那個年代的味道,所以去鄉下都會看到很多似曾相似的東西,也會看到它進步很快的地方。是非常大的對比,它有很好的一面,人也是很善良。”

離開警察工作崗位,毅然決然投入創業,甘單哥說,沒有想太多退路,只希望同樣喜愛越南的朋友,在台灣吃到國民美食。儘管一開業就遇上疫情,加上雞蛋、香菜翻漲,但靠著口耳相傳,依然能夠穩定經營。

“移工他們是很辛苦啦,甚至嫁來的外配,可能要應付不同國家的文化語言習慣,其實都很辛苦,通常我會比較友善的對他們,就是我可能盡量聊天。我覺得就是越南的情感在吧,他們可能覺得我好像很了解越南。”

邊做生意邊交朋友,甘單哥靠著一雙手,要讓在台灣的越南移工和配偶,想家的時候,就來品嚐越南麵包解鄉愁。
