
The internet has blown up over a photo of an egg yolk that’s white. The consumer of the egg was joined by a chorus of netizens claiming it was the first time they’d ever seen a white-on-white egg. But are white yolks even tasty? And what would cause a yolk to be so pale? We spoke to nutritionists, agriculturalists, and the farmers who produced the special egg, to learn more.
This boiled egg gave its consumer a fright. The yolk is white.
What would cause something like this? Miaoli nutritionist Yang Ching-hsuan says the color of the yolk is determined by the food eaten by the hen. If that food contains a lot of carotenoids like lutein or zeaxanthin, that makes the yolk turn bright orange.

The biggest difference is in the level of vitamin A. There’s usually a difference in the luteins too.
We visited the egg farm to ask the owner. They say the main feed for their hens is non-GMO wheat. The yolks in their eggs are usually quite pale. But this official from Miaoli County Agriculture Department says there are two more possible explanations for a white yolk.

One is that it’s a blank cartridge, there is no yolk at all. Another is heat stress. Heat stress can also make the yolk tend towards a white color.
Although white yolks are uncommon, nutritionists stress that white yolk eggs have the same protein content and calories as a normal egg and are nothing to worry about.

會出現白色的蛋黃,到底是什麼原因?營養師說,蛋黃的色澤取決於母雞吃下的食物,如果飼料裡面,含有愈多的類胡蘿蔔素,像是葉黃素和玉米黃素,那蛋黃的顏色,就會偏橘黃色。

實際來到牧場詢問,業者說,他們讓雞隻吃的主食是非基因改造的小麥,生產出來的雞蛋,蛋黃色澤的確比較淡。不過,苗栗縣政府農業處也指出,出現白色蛋黃,也有另外兩種可能。

雖然比較少見,但營養師強調,白色蛋黃或淺黃色的蛋黃,蛋白質、熱量和一般的雞蛋,並沒有什麼差異,請民眾不必過於擔心。
