Spotlight on barista champion, Stanley Chien

Today we take you to meet Barista Champion Stanley Chien. Before roasting coffee, Chien was an electronic engineer. After discovering his passion for coffee, he began training and eventually captured the 2011 and 2013 Taiwan Barista Champion titles. FTV reporter Stephany Yang spoke to Chien to find out more about his career.

Carefully selecting beans and adding the beans into the machine to roast, this is Stanley Chien, a multiple Taiwan Barista Champion. Before his career as a barista, Chien was an electronic engineer. But due to his love for Taiwanese breakfast, he decided to start his own business by opening a breakfast shop and began perfecting his craft in coffee roasting. He won the Taiwan Barista Champion in 2011 and 2023.

I realized I need to learn more about coffee, so I started my coffee business to roast coffee and brew coffee. And then, I joined the Taiwan barista competition.

The road to perfecting his craft and becoming a barista champion was not an easy feat. To keep in shape and perform well, he has a rigorous running schedule and competes in marathons and triathlons. Other sacrifices include spending less time with family due to his busy schedule.

We not only have to make coffee very well, but we also have to have a very strong heart and mind. When you run, you need to keep breathing. Also, when you join a competition, you serve the judge. You still need to communicate and brew coffee. At the same time. Your breath will be very rushed. That is why we run to make our breath normal. You will lose a lot of time with family and kids. I love my mom. I lost a lot of time with my mom.

Chien’s perseverance has made him a prominent figure in promoting coffee culture in Taiwan. He has collaborated with other coffee professionals, such a renowned specialty coffee brand known for its coffee processing methods and Gesha coffee beans. Chien has established a partnership with the founder of the brand, Joseph Brodsky and worked closely with the coffee producer, having visited their estates in Panama. The coffee producer even opened up its first store in Taiwan recently, offering micro-lot coffee selections and custom roasting services.

My first time went to his farm in Panama. I just took the red cherry and ate the cherry. The flavor is very similar to lychee. Like my hometown fruit. I shared this experience to Joseph. I help him to create more good service, process with customers and roast good coffee to customers. Everything about service and make coffee better.

In the future, he wants to pass on his experience and mentor baristas and farmers.

今天帶您認識榮獲WSC世界虹吸咖啡大賽冠軍簡嘉程。在成為烘焙咖啡師之前,簡嘉程是一名電子工程師,發覺自己對咖啡的熱情後,他投入研究、練習,最終獲得了 2011年和2023 年WSC世界虹吸咖啡大賽冠軍。

精心挑選咖啡豆,放入機器烘焙,簡嘉程在成為咖啡師之前,是一名電子工程師。因為喜歡台式早餐,他決定自己開一家早餐店,開始精進自己的咖啡烘焙技巧。簡嘉程曾榮獲2011年及2023年WSC世界虹吸咖啡大賽冠軍。

"我意識到我需要更了解咖啡,所以我開始研究烘焙咖啡和沖煮咖啡。接著參加台灣咖啡師比賽。"

精進技藝並成為咖啡大師,這條路並不輕鬆。為了保持體態和好成績,他制定嚴格的跑步計劃,並參加馬拉松和鐵人三項。繁忙的工作,使得簡嘉程不得不犧牲與家人相處的時間。

"我們不僅要呈現優質的咖啡,還必須有非常強大的心智頭腦。當你參加比賽時,你是在為評審服務,需要交流和沖煮咖啡。這時你的呼吸會變得非常急促,這就是我們用跑步來訓練呼吸的原因。我失去許多與家人和孩子相處的時間,我愛我的媽媽,但我少了許多與媽媽相處的時間。"

簡嘉程的堅持,使他成為台灣咖啡文化的傑出推手。他曾與其他咖啡專業人士合作,例如以咖啡加工方法和藝伎咖啡豆而聞名的知名特色咖啡品牌。簡嘉程與該品牌的創始人 Joseph Brodsky 建立了合作夥伴關係,還參觀他們在巴拿馬的莊園。最近他們在台灣開設首家門市,提供微批量咖啡選擇和客製化烘焙服務。

"我第一次去他在巴拿馬的農場。我吃了他們的紅櫻桃,味道跟荔枝非常相似,來自家鄉的水果。我和約瑟夫分享這個經驗,我協助他提供更優質的服務、顧客溝通、烘焙的咖啡。一切都是為了服務,讓咖啡變得更好。"

接下來,簡嘉程希望將自己的經驗傳承給年輕咖啡師和農民。
