Taste of Peru in Taipei

Today, we take you to meet Jose Fernandez, founder and chef of a Peruvian restaurant who came to Taiwan from Peru 20 years ago. His love for his home country and Taiwan inspired him to open a restaurant in Taipei, where he cooks up authentic Peruvian dishes all by himself. FTV reporter Stephany Yang spoke to him to find out more.

At this restaurant, you can eat classic Peruvian dishes, such as Peruvian pickled chicken.

Peruvian pickled chicken is served with smoky chargrilled chicken, quinoa rice, and fresh stir-fried vegetables, with a generous helping of spices on the side. The chicken is grilled in a charcoal oven that is over 200 kilograms. That oven made the journey all the way from Peru to Taiwan.

Peruvian grilled chicken has 15 kinds of marinades, all of which are stuffed in, including red wine and chile, and more, and then it takes four to five hours to marinade, and six hours in summer. We use a charcoal oven to give it more taste. When you go to Peru, you must eat ceviche and grilled chicken.

There’s also Peru’s national dish, ceviche – fresh fish marinated in lemon juice, spiced with onions and chile peppers. It took Fernandez quite some time to decide on which type of fish to use for the ceviche. He finally chose cobia.

There are a lot of fish in Taiwan, but I wanted to find fish suitable to make ceviche, and not just random fish. It must have the right taste. I didn’t know what kind of fish to use at first. I went to the market to see. I think the taste is very important. Tilapia meat is delicious, but I don’t like the taste very much. I decided to buy cobia, and I am very happy about that. Taiwanese people like cobia very much.

The owner of the restaurant, Jose Fernandez, is from Peru. After marrying a Taiwanese woman, the two moved to Taiwan together. At first, he taught salsa dance, but after teaching for 10 years, he wanted to try something new. Since he loves cooking and also missed food from Peru, he decided to open a Peruvian restaurant. His store is one of the very few Peruvian restaurants in Taiwan.

When I first got to know Taiwan, people always asked me, what should I eat when I go to Peru? You can eat ceviche, saltaldo, seco. They don’t know what to eat there. They go there to eat food for foreigners like pasta and pizza. They have never eaten Peruvian food. So I want to cook very famous Peruvian dishes, so that Taiwanese can eat Peruvian dishes here, then go to Peru knowing what to eat.

Peru is more than 17,000 kilometers away. Before his patrons have the opportunity to visit Peru, Fernandez hopes to give them a taste of his home country right here in Taiwan.

懷念家鄉味 來台祕魯人自己開餐廳一解鄉愁

今天,帶大家來認識20年前從秘魯移居到台灣的秘魯餐廳老闆何塞,因為熱愛家鄉秘魯和台灣,在台北開了一家餐廳,讓台灣人可以探索道地的秘魯經典菜餚。味道如何,一起來品嘗!

來到這間餐廳,可以品嘗到秘魯道地的經典菜餚,”香料烤雞藜麥飯”就是其中之一。

“香料烤雞藜麥飯”的主要成分是煙燻炭烤雞肉、藜麥飯、新鮮蔬菜及大量香料。這個催生炭烤雞肉的炭烤爐來自秘魯,重達200多公斤。

“秘魯的烤雞有15種醃料,全部塞進去,有紅酒、辣椒,有很多,然後要烤4到5個小時,夏天要烤6個小時。我們用木炭烤肉,讓它有味道。去秘魯一定要吃”檸檬涼拌魚”跟烤雞”

還有秘魯的國菜”檸檬涼拌魚”。檸檬汁醃製的鮮魚,加入洋蔥和辣椒調味。光是決定選擇海鱺來製作,就花了餐廳老闆何塞很長的一段時間。

“台灣有很多魚,可我想要找到適合做”檸檬涼拌魚”的魚,不是隨便找。一定是味道。我剛開始不知道要用什麼魚,我去市場看,我覺得味道很重要。吳郭魚肉好吃,但味道我沒有很喜歡。我買海鱺試試看,我很開心,這是台灣人很喜歡的魚”

來自秘魯的老闆何塞,在與台灣女孩結為連理後,決定一起移居台灣,一開始以教騷沙舞為業,10年之後,決定要大膽突破,由於熱愛烹飪,又懷念秘魯美食,何塞決定開一家秘魯餐廳,成為台灣少數的秘魯餐廳之一。

“我剛開始認識台灣人,都會問我說,我去秘魯要吃什麼?可以吃”檸檬涼拌魚”、”牛肉彩椒藜麥飯”、”青醬燴牛肉藜麥飯”。去那邊他們不知道要吃什麼,他們去那邊吃外國人的東西,像是義大利麵、比薩,他們沒有吃過秘魯菜,所以我想要做非常有名的秘魯菜,這樣子台灣人來這邊吃過了,可以放心去秘魯"

秘魯與台灣相距一萬七千多公里,何塞希望能讓有意造訪秘魯的民眾,先來這裡做做功課,了解秘魯美食。
