Inmates at Tainan Second Prison make bright pink and orange noodles

Taiwan’s appetite for noodles is inexhaustible. And now even the prison system is getting in on the business. Inmates and wardens at Tainan Second Prison have developed their own noodle products. Their colorful dried noodles are flavored with vegetables. The bright pink and orange products are very popular with consumers. The hope is that by learning the skills of noodle-making, inmates can prepare to start a new, law-abiding life when they finish their sentence.

Pressed through a machine, the dough comes out as noodles, which are placed into these round baskets in metal rings. They’re put out to dry in the sun. Nearby there are also orange carrot-flavored noodles. These products are all made by the inmates at Tainan Second Prison.

The most famous noodles in the Tainan area are known as “guanmiao” noodles. We asked a guanmiao noodle master to come here and teach them the method. Apart from having the basic production capacities, you also need plenty of time to dry them in the sun. So right now, we can produce about 400 packs a day.

Six inmates in Tainan Second Prison are at the noodle-master level, and they have eight more students studying. They started off by making simple plain dry noodles. Then they invented these natural colored noodles flavored with vegetables, and created this drying space. It’s surrounded by protective gauze to keep birds away.

We’ve added several layers of protective nets outside. So various dusts, as well as birds, can’t get in. We scatter some of the crumbs of our noodles outside for the birds here to eat, which is a way to live in harmony with them. It’s also a good kind of life education.

The noodles are boiled for seven minutes, and then eaten with sauce. They’re a way for inmates to make an income, but more importantly, a meaningful trade. When the inmates are released, this could be the first step for them to find a new place in society.

天然蔬果加多款醬料 南二監開發"五彩乾拌麵"

台灣乾拌麵市場廣大,現在連監獄也要來搶食這塊大餅。台南第二監獄成立製麵所,找來關廟麵老師傅教導受刑人做麵條,還設置新的曬麵場,以純手工、全日曬的方式,做出五種天然蔬果口味的乾拌麵。

一大捲粉色的麵皮,是因為加入了紅龍果的關係,顏色好夢幻。

把麵皮放入機器中,切出一條條的麵條,再放進圓形的鐵框之中整型,拿到日曬場曬太陽,還有橘色胡蘿蔔口味的麵條,這些都是台南第二監獄受刑人所做的。

“我們台南地區的話最有名的麵,就是所謂的關廟麵,我們這裏的話請了關廟麵製作的老師傅來這邊指導他們,它除了要有基本的產能以外,它還要有充足的日曬時間,所以目前我們一天的產能,目前是大概四百包”

南二監製麵班有六名師傅級的收容人和八名學員,一開始只有做原味乾拌麵,後來用天然蔬果研發出五彩麵條,還新設置了曬麵場,四周都有防護網防止鳥類靠近。

“我們外面有加各層的防護網,所以一些灰塵包括鳥類的部份都不會進來,原本這邊的鳥,我們還利用我們做麵的一些碎料,在另外旁邊撒給牠們吃,也是一個和諧共生,也是一個很好的生命教育”

快煮七分鐘,加入醬料就能食用。乾拌麵不只為監獄和受刑人增加收入,更希望受刑人學得一技之長,能夠協助他們出獄之後回歸社會。
