
A young baker from Vanung University has won the President’s Educational Award. As a student at the Department of Food and Beverage Management, Chiang Pei-hsuan spends her days in the kitchen. Her specialty: artistic cakes and breads. The top young baker has won awards for her delectable and meticulously decorated creations. And she’s won special recognition as a disabled baker, having been born with conjoined fingers.
Butter is cut and added to dough, which goes in a variety of molds. Before long, they become beautiful, fragrant loaves of bread.
Chiang Pei-hsuan is a recipient of the 2023 President’s Educational Award for “endeavor and ambition.” She was born with conjoined fingers on her right hand, which were treated with multiple surgeries and extensive rehabilitation. She trained her fingers to be more strong and stable by pressing together chocolate and frosting. Some aspects of the work may take more effort, but she never forgets the passion that brought her into this job.

You could see, when I was rolling with my hand just now, how there’s a difference between my hands, and in how powerful they are. I need to practice that more, probably. And when I was rolling just now, it was quite difficult.
Chiang’s hard work is attracting accolades. She won first place for cake decoration in the 17th National Skills Competition for the Disabled. She told us how the colored fondant is the most complex and manually taxing part of cake decoration.

Every morning, basically I do it for seven or eight hours a day. With the time I have left, I’m thinking about how to make artistic breads.
And she has a charitable project for her baking.

She’s not just making bread. She wants to spread love throughout the world. So every day, when she’s not in class, she takes her practice breads to the four boroughs around here and gives them to poor families and lonely older people, so they can know the experience of bread.
Chiang’s perseverance and ingenuity have been held up as a wholesome example, bringing joy to her and her community.
2023年總統教育獎「奮發向上獎」日前公布,萬能科技大學餐飲系的江佩萱獲得殊榮,出生時右手手指沾黏,連在一起,經過多次手術才逐漸恢復,沾黏的問題,沒有減少她熱愛烘焙的決心,從麵包到蛋糕裝飾都難不倒她,就因為自己努力學習,讓她在全國身心障礙者技能競賽獲得蛋糕裝飾第一名的殊榮。
切下奶油,加入麵團,揉出一團團雛形,不到一會兒就成為色香味俱全的麵包。

“因為你看我的手部剛剛在滾圓的時候,其實是兩隻手都不一樣,所以我的力道都是不一樣的,這可能是要多練,而且我剛剛滾的時候,也是還是有點困難”
努力付出終獲回報,江佩萱榮獲第17屆全國身心障礙者技能競賽,蛋糕裝飾第一名。她坦言,蛋糕裝飾最複雜的、也最費手力部份就是染色翻糖。

“每天早上,就基本一天,應該7、8個小時時間在做,我就剩下的時間在思考,藝術麵包怎麼製作”
課堂上做的麵包,也能拿來行善。

“她不是只有做麵包,她希望把這個麵包用愛傳天下,所以我們旁邊周遭的四個里,她每天在課餘之後,都把她的練習的麵包,親自送給所有的貧戶,孤苦無依老人,讓他們了解,知道麵包的感受”
江佩萱努力不懈的精神,不只改變自己,也滋潤他人。
