Supermarket builds biggest factory for fresh salmon processing

A supermarket chain has partnered with a Norwegian supplier to build a new salmon-processing plant. It’s the largest fish packaging plant in Taiwan. Every day, it processes up to 1,000 salmon. Now, for the first time, FTV has been allowed onto the factory floor to find out how the fish are prepared for sale.

Atlantic salmon, which recently were jumping in the seas of Norway, come out of boxes, having flown to Taiwan. They’ll be sent to a store within one day. It’s all about the speed and freshness of the delivery from sea to plate.

From fishes swimming in the sea, it only takes two hours maximum, then it’s already in the box with the ice. Ship it straight to the airliners, flying it daily into Taiwan.

The salmon are put through an automatic de-scaler. It can process up to 180 salmon per hour. Some of the scales are still removed manually, as are the fins and gills.

It’s just been processed. Each fish weighs up to 6 kilograms. Then it has to be placed in a low-temperature bubble pool.

The pool is a bit like a Jacuzzi. After the fish has been in this spa for 30 seconds, all its fine scales and mucus has been washed away. The slicing is given over to this fast slicing machine.

The knife falls in the blink of an eye, slicing steak after steak cleanly away. Each is two to three centimeters thick. The machine can slice up to 150 salmon in one hour. Next to it is this machine, which removes the tail and head cleanly. The automated machinery produces output three times as fast as manual labor.

In one factory, we can process up to 1,000 salmon a day. As the fish come in, they’re in the cold chain all the way through, so the products have all been refrigerated.

Temperature is key to keeping fish fresh. The processing rooms are kept at 6-12 degrees Celsius. Finally, the fish are sealed, and tested for metal contaminants. Then they can be labeled and shipped off. The factory ships 1,500 packs an hour. The company has invested NT$2 billion, optimistic about Taiwan’s love of salmon. They can sell 450,000 fish a year, making a turnover of NT$1 billion.

Taiwanese people love salmon. It’s certainly the best-selling species in our sales range. We have salmon steaks and fillets of different parts. Next year we predict profits to grow by another NT$100 million, to reach NT$1.1 billion.

This multinational cooperation is focused on speed, but also ensuring quality, so that Taiwan can enjoy the finest fish dishes.

國人年吃520萬條鮭魚! 超市業者曝光最新生產線

台灣人愛吃鮭魚,一年就能吃掉520萬條,有超市業者與挪威鮭魚供應商合作,過去就賣出超過10億元,業者首度開放生產線,從挑選清洗到裁切,一起來直擊,全台最大的生鮮處理廠。

一隻隻大西洋鮭魚,原本在挪威海域活跳跳,現在一箱箱空運抵台,一天內就要送到超市,從產地到餐桌,要拚速度、拼新鮮。

“鮭魚從在海裡游泳到抓上岸,最多只需要兩小時,就會裝在冰塊裡直接運送上飛機,每天都會有班機送到台灣。”

搭飛機來的鮭魚,送進自動去鱗機,每小時最多可以處理180尾鮭魚,但部分鱗片還是交由人工把關,手工剪鰭、去鰓。

“剛剛處理完,(每條)大概有重達6公斤的鮭魚之後,要送到低溫的氣泡池。”

低溫氣泡水,像是按摩浴缸,幫魚做spa30秒,把細小麟片、黏膜通通洗乾淨,而切魚的事,就交給這台快刀手。

一眨眼刀刀落下,立刻變成整齊的輪切鮭魚,每片厚度2至3公分。每小時最多可以分切150尾的鮭魚,另一邊的切割機,則精準去除魚尾鰭和魚頭,有了這些自動設備,產量比人工多3倍。

“(每天)最高一個廠,我們大概可以處理到1千尾的鮭魚左右。魚肉整個進來它是全程冷鏈,商品都有做保冰的動作。”

魚肉要新鮮,溫度是關鍵,處理區維持6到12度。最後經過封膜、檢測金屬異物,就能上標籤送貨,每小時能產出1500包。業者砸20億,打造全台最大的生鮮處理廠,就是看準台灣人愛吃鮭魚,一年可以賣出45萬尾,營收一年達10億元。

“台灣人很愛吃鮭魚,牠的確是我們銷售裡面,最好的一個魚種。有輪切還有菲力不同的部位,明年的話(預估)再成長1億,達到11億的業績。”

跨國合作,不只拚速度,品質也要層層把關,讓美味鮭魚端上民眾餐桌。
