
High-end seafood dishes often use flatfish for their tender texture beloved by gourmets. A fish farmer in Taitung’s Zhiben uses deep-sea water to produce flounder that is particularly rich in fat and flavor, with an exceptional texture. They also produce other highly valued aquatic products, such as sea urchins, lobster, and grouper. Deep-sea water is a precious Taitung resource, they say. The farmer also hopes to expand exports and attract more young people to take part in the industry.
Sea urchins are raised in plastic baskets. Nearby breeding tanks contain grouper, lobster, and other high-end aquatic products. But the most unique part of this farm is its black flounder.
This fish farm in Taitung’s Zhiben uses deep-sea water to raise flounder, called the “emperor fish.” They invested more than NT$50 million over two years to build out the facilities.

We’re the first in Taiwan to commercialize the production of flounder. We’ve created a complete farming facility. Deep-sea water is defined as water from over 200 meters deep. It’s rich in rare elements and nutrients, and has a cooler temperature. Flounder needs a cool environment to grow.
Lin Hsin-chien is from Taitung, but returned home for work after a stint up north. The seafood cultivated in his deep-sea farm has a tender, pliant texture beloved by gourmets. He supplies a number of five-star hotels. But local councilor Chien Wei-kuo says Taitung’s transportation infrastructure needs improvement to quickly transport fresh seafood to other parts of the country.

For example, the roads, canals, and drainage ditches near the testing facility aren’t good enough. Hopefully in the next few years we can get more funding for the aquaculture park to expand through greater adoption of deep-sea farming.
Taitung is working to bolster its advantages in aquaculture, with an eye to exporting and increasing production capacity.

高檔海鮮食材〝比目魚〞因為口感細嫩,深受老饕喜愛,台東知本有養殖業者,利用深層海水,養殖出口感Q彈、油脂豐富、香氣十足的比目魚,還有多種高經濟價值的水產,包括馬糞海膽、龍蝦、石斑魚等。業者表示,深層海水是台東珍貴的自然資源,希望拓展外銷,並吸引青年返鄉就業。
一顆顆馬糞海膽,養殖在塑膠框裡,其他養殖槽,還有石斑魚、龍蝦等高經濟海產,最特別的就是這黑溜溜的「比目魚」。
台東知本的養殖業者,利用深層海水,成功養殖具有「皇帝魚」之稱的比目魚,投資超過5000萬,耗時2年打造漁電共生場。

“我們是國內第一個將比目魚商品化,做到比較完整的一個廠商,海洋深層水的定義,就是要超過200米以下,才能叫做海洋深層水,它的稀有元素跟營養元素比較豐富,低溫也是它的特色,那比目魚需要在低溫的環境,牠才能長大”
老闆林新建是台東子弟,北漂後返鄉工作,這些利用深層海水養殖的水產,肉質Q彈、口感細嫩,受到饕客喜愛,被不少5星級飯店指定合作,但在地議員簡維國喊話,台東交通建設必須改善,才能將新鮮水產,快速送到都會區。

“比如說我們在水試組旁邊的這些道路、溝渠,排水溝渠,都做得還不夠完善,也希望在未來這幾年,能夠加大投資的力度,讓這塊養殖的園區,能夠充分運用海洋深層水,然後一起來發展”
