Japanese cuisine is renowned around the world and one of the highlights of traveling to Japan. One Taiwanese person living in Japan works as a food guide and has become close with several famous chefs throughout the years. She gave up her corporate lifestyle to move to Japan and start a new career, becoming a bridge connecting Taiwanese people with Japanese cuisine.

Fresh abalone and shrimp are transformed into delicious sushi by master chefs with the practiced skill of many years. From the insightful explanations of Hu Chia-wen, a Japanese food guide from Taiwan, people learn the secrets behind this famous cuisine.

Although there are a lot of food guides introducing Japanese restaurants, Ms. Hu Chia-wen is passionate about the same things as us chefs. She has tremendous passion for culinary culture and philosophy.

Hu studied abroad in Japan and spent years working in public relations at a major cosmetics brand. She left her corporate lifestyle behind and moved to Japan 20 years ago, where her love of Japanese cuisine led her to become a food guide.

After I quit my job and moved to Japan, I studied restaurant planning and food design. It wasn’t until I met Ms. Hsu Hsin-yi and she gave me the chance to explain Japanese cuisine that I really started down this path.

Hu rigorously studied Japanese cuisine and dining etiquette so that her culinary tours would help participants immerse themselves in local culture. This level of professionalism earned her high praise from one of Japan’s most famous sushi chefs, Jiro Ono.

There are few people on this Earth as good as her. If she sees me outside, she will run over to say hello. She is the woman we have the most confidence in.

When Ms. Chia-wen is introducing cuisine, she carefully explains the dining method and table etiquette, paying close attention to every detail. People eat with great care and follow proper etiquette.

I hope to continue being a bridge, connecting the passion of Taiwanese people with the refinement of Japan. I believe that food is not just for satisfying the appetite, it is the breath of culture. In the past 20 years I’ve walked a small trail, but I hope one day it will become a boulevard.

Using cuisine as a bridge to connect cultures is Hu Chia-wen’s dream. She hopes that through her efforts, more people will be able to experience the magic of Japanese food.

“雖然有很多美食導覧家,介紹日本的餐廳,不過胡家雯小姐,對我們料理人,以及料理人熱愛的事物,擁有相同的熱情,她對於板前文化與哲學,擁有極高的熱情。”

曾經赴日留學的胡家雯,任職過化妝品牌的公關總監,20年前辭去工作回到日本,卻始終沒有忘記最愛的美食,就在遇到了貴人之後,走上美食導覽的工作。

“我辭掉工作回到了日本之後,我學習了餐飲規劃、食品的設計工作。直到我遇上了許心怡小姐,給我一個在日本講解餐飲的機會,我才真正的走上了這條路。”

美食導覽時為求盡善盡美,讓團員能「入境隨俗」,胡家雯認真鑽研料理及餐廳禮儀,這樣的敬業態度,讓壽司之神小野二郎父子,給予這位台灣好友極高的評價。

“未來我希望繼續當一座橋,能夠讓我們台灣人的熱情,遇見日本的細膩。我認為吃不只是口腹的一個滿足,而是文化的呼吸。二十幾年來我走的,可能是一個小徑,希望未來能夠成為大道。”

用料理美食成為跨越兩國的橋樑,是胡家雯的夢想,也期盼彼此產生的火花,讓國人得以體驗更多美食的饗宴。
