Spring Festival dishes now for sale at Taipei’s Nanmen Market

The Lunar New Year is still a month away, and already Taipei’s Nanmen Market is selling festive goods. Vendors have rolled out traditional dishes such as Buddha jumps over the wall or dongpo pork. Shoppers say they’d like to get a jump on the crowds, that will be getting bigger as the holiday approaches. Let’s hear from some of them.

I came to have a look. If you come closer to the Lunar New Year, it can get really crowded. Pig knuckles are a must, braised pork shank, fish, Buddha jumps over the wall and shrimp.

A lot of people are coming to look for Lunar New Year dishes. We can vacuum pack them so they are easy to reheat. Costs are a bit higher, but for now we are absorbing the higher costs.

Wage increases have made staff costs go up. There’s also electricity bills and even sugar prices have gone up. It doesn’t seem like a lot in isolation, but we use sugar, salt and soy sauce every day, little by little it all adds up.

Vendors say they are feeling the pressure of higher costs of material, labor and transportation. Some have adjusted their prices accordingly. For instance, sausage that used to cost NT$260 per 600g now goes for NT$280. But others say they are willing to absorb the costs in order not to hurt demand.

再一個月就要準備過年了,今天是台北南門市場年菜開賣第一天,多家攤商端出佛跳牆、東坡肉等年節必備料理,一些民眾提早來看看,思考過年要準備哪些美味料理。

“先來看一下,到時候過年來就直接下手,因為過年人太多了。豬腳一定要的,蹄膀、魚啊,然後一個佛跳牆啊,一個蝦。”

“其實現在開始已經很多人來看年菜了,因為像我們的年菜可以幫客人做真空包裝,最主要是它復熱很方便。成本的話其實還是比較高一點啦,那其實這方面的話,其實我們是自己去吸收的。”

[[南門市場攤商 蔡先生]]
“調薪啊,這個人事根本就會增加,還有一些電費,連糖都有漲價。漲的幅度很小,但是它是每個都要用到的,糖、鹽、醬油這些配料啊,就是這樣一點一點累積起來。”

通膨讓原物料狂漲,加上人工、運費等多重壓力,成本反映在價格上,像是香腸,去年一斤260元,今年調漲20元,來到280元,攤商說漲價非不得已。不過也有些攤商則選擇自行吸收增加的成本,希望不要影響買氣。
