China Airlines launches plant-based menu, Starlux to serve bubble tea

Air travel is recovering at last after two years of the pandemic. To win over customers, China Airlines has launched a vegetarian inflight menu created by a gourmet restaurant brand. As of Dec. 1, passengers departing from Taiwan can book a plant-based meal online. Over at Starlux Airlines, bubble tea will be on the menu in business and first class, starting next year.

Black truffle sauce is heated in the pan, before it’s blended well with white rice. This truffle risotto is served with crispy fried fish fillets. Then there’s this spring salad made with mountain yam noodles and tender succulent. Everything on the menu is plant-based.

Taking aim at post-pandemic travelers, China Airlines has launched a plant-based menu developed by a two-time winner of the Michelin Green Star. Entrees include plant-based meat with turmeric rice and plant protein with pasta shells. Starting this month, the meals will be available by preorder for all flights departing from Taiwan, to all cabin classes.

In 2019, roughly 10% of our meal orders were vegetarian. Between 2016 to 2019, we’ve seen considerable growth in this segment. We’ve also been seeing the rise of low-carbon food culture across the globe. We think that this is the trend of the future.

But at an altitude of 35,000 feet, Michelin-starred dining is a test for both airline and chef.

The truffle risotto is especially challenging, because of the way it’s made. The preparation had to be adjusted somewhat for China Airlines. It’s made a bit differently from the way it’s cooked in a restaurant. Our hope is that when the meal is opened up inflight, the aroma of the truffle will be fully preserved.

Starting next Jan. 1 at Starlux Airlines, bubble tea will be offered on select routes in business and first class. Starlux will serve a variety of classic drinks, along with delicacies from a renowned barbecue shop and a Michelin-starred restaurant and bar. To boost post-pandemic growth, airlines are investing big in premium inflight meals.

航空業力拚疫後復甦,紛紛把米其林搬進機艙。華航宣布找蟬聯兩屆米其林"綠星"的餐廳,首度設計全素 "蔬食" 機上餐,12月起開放台灣出發的旅客,透過網路預訂。星宇航空也跟米其林一星餐酒館合作,還將台灣經典手搖飲帶到高空,從明年一月開始,提供商務艙和頭等艙旅客,現調的"珍珠鮮奶茶"。

松露醬下鍋炒香後,再加入白飯拌勻,香氣四溢的松露炊飯,就能盛盤搭配酥炸魚排,還有這道沙拉,吃得到山藥細麵及石蓮花,這些全部都是"純素食"。

看準邊境全面解封後市場,華航和蟬聯兩屆米其林"綠星"的餐廳合作,量身打造全新"蔬食"機上餐,有植物肉薑黃飯、植物肉貝殼麵等。這個月開始,從台灣出發的所有航線,全艙等旅客都能事先透過網路預訂。

“2019年左右我們素食的訂餐比例大概是10%,我們可以看到從2016年開始到2019年這段時間,有滿大的成長,也看得到國際趨勢對於低碳飲食文化的推動,我們覺得未來這是一個趨勢”

要在3萬5千英呎高空,還原米其林餐點風味,也考驗主廚和空廚功力。

星宇航空從明年元旦開始,也將提供特定航線的商務艙及頭等艙旅客,新鮮調製的"珍珠鮮奶茶",還有多款經典的特調飲品,還跟燒肉名店、米其林一星餐酒館聯手打造空中佳餚。各家航空紛紛在機上餐飲下足功夫,力拼疫後復甦。
