Vendor continues ‘salt worker’ tea tradition from Tainan’s Cigu

The sun is particularly harsh in southern Taiwan, driving people into the shade as much as possible. But in Tainan’s Cigu, some beat the heat with traditional “salt worker” tea. This simple and refreshing drink hasbeen passed down through the generations as a cure to summer ails. Let’s check out the secret to this recipe.

When talking tips on staying cool, the salt workers who used to work all day under the hot sun would tell you one thing. Their secret to staving off the heat was a cup of “salt worker” tea.

It’s easier to dissolve brown sugar in hot water. Add two spoonfuls of brown sugar. When it cools down, add sweet potato starch. You can’t add it when it’s hot or it’ll thicken.

Brown sugar and starch brewed in water. Even for such a simple combination, the cooling effect is immediate.

We elevated “salt worker” tea by adding salt and ice cubes, and shaking it to become a smoothie.

Since summer is so hot in Tainan, mango shaved ice is also a specialty ensuring that shops are full of customers.

On weekdays we have 10 or 20% more customers. On weekends, it’s 30% or 40% more.

南台灣艷陽高照,毒辣的大太陽,讓許多民眾避之唯恐不及。其實在台南七股,老一輩流傳著一種鹽工茶,做法簡單又能抵抗酷熱,從以前就是消暑秘方,帶您來一探究竟。

要說到對抗酷暑,過去成天曝曬在烈日底下曬鹽的鹽工,應該最知道,而以往他們預防中暑的秘方,就是這一杯,鹽工茶。

“加熱水方便於黑糖可以溶解,黑糖就是加兩湯匙,降溫之後我們再來加番薯粉,不能熱熱的加番薯粉,不然它會有勾芡的效果。”

黑糖、地瓜粉加入清水沖泡,超簡單的做法,卻真的有讓人,一喝就清爽的感覺。

少了甜膩,多了爽口和能量補充的效果,做成冰沙,更清涼有勁。

“把鹽工茶升級,我們就是加了鹽跟冰塊,透過搖晃,然後把它做成冰沙。”

另外,台南因為天氣熱,又有當令特色的芒果冰,當然也是來客爆滿。
