
Videos claiming that convenience store bread is dangerous for your health have recently gone viral on Douyin, the Chinese version of TikTok. One Chinese influencer even claimed that glycerin fatty acid ester and maltodextrin, which are found in the bread, can cause cardiovascular disease. However, nutritionists have come out to debunk the claim. Doctors also warn that the thing you should really watch out for is refined carbohydrates.
The shelves of this convenience store are packed with all kinds of packaged bread. But videos going viral on Douyin lately are claiming they could make you sick.

There’s no difference. Whether you get it from a convenience store or a bakery, it might not be good for you.
Online influencers have been sharing videos questioning why convenience store bread doesn’t go bad after leaving it out at room temperature for two weeks. The reason is that they have a lot of added preservatives. Of them, influencers are claiming that glycerin fatty acid ester and maltodextrin can cause cardiovascular disease.
However, nutritionists say the reason store-bought bread lasts a long time has to do with something called “colony count.”

When large factories are producing bread, they’ll control the colony count thorough disinfection. So actually, throughout the entire process, store-bought bread has very low levels of bacteria growth.
Glycerin fatty acid ester and maltodextrin are approved preservatives used sparingly and are light on calories. Eating it in moderation will not cause chronic disease. But what is worth worrying about are refined carbohydrates and margarine.

Margarine and also some frostings are very sweet. Margarine is hydrogenated vegetable oil, which is a trans fat that increases your chances of developing high cholesterol. So it’s not that you can’t eat bread. You can choose healthier bread, which can be good for you.
You won’t get sick from eating store-bought bread, but you should be careful not to eat too much. Doctors also say that if you’re worried about it, you can eat high-fiber five-grain bread instead.

近期抖音平台瘋傳"吃超商麵包會傷身"的影片,甚至連中國網紅都來參一咖,宣稱超商麵包內添加的"脂肪酸甘油酯"和"麥芽糊精"會導致慢性病。不但營養師出面闢謠,醫師也提醒,該擔心的反而是麵包的主體"精緻澱粉"。
便利商店貨架上,麵包種類琳瑯滿目,但近日抖音影片瘋傳,吃超商麵包,會吃出病來。

“沒有差耶。(麵包)不會因為它是超商還是麵包店,就會有健康不健康的問題。”
有網紅拍影片,質疑點出超商麵包放在常溫下兩週都不會壞掉、發霉,正是因為裡面添加大量防腐劑,還把兇手指向"脂肪酸甘油酯",和"麥芽糊精",會導致三高、心血管疾病。
但營養師闢謠,強調超商麵包保存期之所以較長,跟"落菌數"有關。

“大的廠商在製造的時候,他其實會控管它的一個落菌量,消毒得很完整,所以其實在整個過程當中,(超商麵包)它的一個含菌的數量是比較少的。”
"脂肪酸甘油酯",和"麥芽糊精",是合法食品添加物,劑量、熱量都不高,適量吃不會導致慢性病。要注意的,反而是精緻澱粉和人工奶油。

“人工奶油的攝取,或是有些糖霜等等,那可能就是比較甜,或是你加了人工奶油,它是氫化植物油,它是反式脂肪,也會增加高血脂罹患的機會,所以麵包並不是不能吃,可以健康吃,多選擇健康的麵包吃,對身體還是會有幫助。”
吃超商麵包不會因此生病,但仍需注意不要過量,醫師也建議,若擔心可以食用富有高膳食纖維的五穀雜糧麵包取代。
