
TSMC has built a major chip plant in Kumamoto, with a second one underway. But exchanges between Kumamoto and Taiwan don’t end there. A restaurant in Taipei is serving up Kumamoto delicacies, such as black garlic tonkotsu pork soup ramen, among others. FTV reporter Stephany Yang takes us in for a taste!
First up, white rice infused with fragrant tea and sashimi made from blanket octopus. Amakusa is renowned for its octopus production.
Other highlights in the menu include the classic Kumamoto-style lotus root tempura and Yatsushiro baby mantis shrimp tempura.
There’s also Taipi-en, a dish unique to Kumamoto. The soup combines glass noodles with chicken broth, accompanied by seafood and slices of pork.
Lastly, a crowd favorite is Kumamoto black garlic Tonkotsu pork soup ramen.

There’s something unique in Kumamoto — it’s a ramen made with black garlic broth, and it’s worth trying. Black garlic has become a popular health food in recent years due to its fermentation process, and incorporating it into ramen gives the dish a depth to its flavor. It’s very delicious.
Kumamoto is a region is famous for dishes featuring horse meat, lotus root with mustard and miso, and unique sweets like ikinari dango. A restaurant in Taipei is now serving up Kumamoto delicacies. Its culinary team visited the region and immersed themselves in its rich food culture to recreate local delicacies in Taiwan.

This trip to Kumamoto was incredibly rewarding. We had the chance to explore the region’s traditional local dishes and some modern specialties that have been introduced recently. Throughout the process, we consulted various references and materials, which helped us bring some of Kumamoto’s local specialties and famous products back to Taiwan. We also visited Yatsushiro, where mantis shrimp is a local delicacy. It’s not something you’ll typically find in Northern Taiwan. Locals in Yatsushiro eat it as a seasonal food, especially in the summer. Then we went to Amakusa, where meat is relatively scarce, so octopus is considered one of their regional specialties and has become a key source of protein.

台積電在熊本設廠,目前第二廠正在興建中。不過熊本與台灣的交流不僅如此而已。台北就有一間餐廳推出期間限定的熊本特色美食,例如黑蒜豚骨拉麵等等。一起來看看。
首先是天草風生章魚茶泡飯,將水章魚薄切與昆布系高湯結合。日本天草地區以盛產章魚聞名。
菜單亮點還包括經典的芥末蓮藕天婦羅盛合,和八代蝦蛄天婦羅唐揚。
還有熊本特色料理太平燕,以冬粉、海鮮與蔬菜組成的和風湯品。
最後上桌,是非常受歡迎的熊本風黑蒜豚骨拉麵。

"這次去熊本有很大的收穫,可以看到一些熊本早期的一些特色菜,跟最近引進到一些現代的特色菜,過程當中也找了一些文獻跟一些資料去做參考,演變成我們把熊本當地的一些特產、名產把它帶到台灣。我們去到八代,八代的話有蝦蛄。 蝦蛄的話,在台灣其實北部是沒有這個東西的,在當地具名是以這個來當作他們一個夏天生產的一個產物來吃。再來一個就是天草,他們當地肉類比較缺乏,他們當地的特產是章魚,所以他們會以章魚做一個蛋白質的來源"
