
Marmalades that taste of the forests of Yilan have brought a local marmalade maker success at a prestigious competition in the UK. The fruit artisan is Yang Yen-ching, a young entrepreneur who uses local ingredients to infuse each jar of marmalade with a local flavor. The ingredients she uses range from local citrus fruits to shell ginger and even Taiwan incense cedar. Her marmalades received acclaim at the Dalemain World Marmalade Awards, where she shone brightly for Taiwan, bagging one silver and six bronze awards.
Citrus peel goes into the pot and stirred until it’s boiling to become freshly-made marmalade. Add black tea to turn it into a delicious fruity drink. There’s plenty of fruit choices so everyone can have their pick. All these marmalades are made by a young entrepreneur from Yilan.

Our marmalades are different because they have a lot of fruit pulp. We don’t add pectin, it’s all fruit pulp. It can be used as a spread or in teas, or added to sodas and yogurt. It can be a condiment, or a dipping sauce for chicken breast.
Yang Yen-ching recently won a silver award and six bronzes at the Dalemain World Marmalade Awards in the UK. Her marmalade-making journey started in 2022 due to an oversupply of pomelos in Dongshan.

I saw all the unsold pomelos and I felt inspired to use them and make them into products. I hope to create a map on the citrus culture in Yilan featuring all the different specialties in the area.
Yang is turning local fruits into products that have become an international success. She hopes her sweet treats will put Yilan and it fresh produce on the world map.

你能想像宜蘭的森林風味竟然能濃縮在一罐果醬裡面?在英國「世界柑橘類果醬大賽」中,宜蘭的果醬研發職人楊雁晴用台灣特有的肖楠葉、月桂葉搭配茂谷柑,做成果醬,橫掃7面獎牌,除了個人風光,更讓宜蘭味在國際上大放異彩。
鍋中加入新鮮柑橘皮,邊攪拌邊煮,直到滾水煮沸,成了新鮮果醬,之後倒入紅茶,讓它變成果茶飲用,想喝不同口味的果茶,現場也有多種果醬可以挑選,而這些果醬,全是出自一名宜蘭在地青年之手。

“我們的果醬跟一般比較常見的果醬不一樣的地方就在,它果肉是很多,它是沒有加果膠,是純果肉下去煮的,所以就不只可以抹吐司也可以拿來泡茶,加氣泡水可以加優格,或者是當佐料,或是當雞胸肉的蘸醬。”
楊雁晴剛在英國「世界柑橘類果醬大賽」中,奪下1銀6銅的好成績,她之所以踏上做果醬這條路,全因為2022年冬山柚子滯銷。

“我那時候有去看到柚子滯銷的狀況,然後給我一些啟發,我就想說那我是不是可以做一些跟農產品加工有相關的。我希望我未來可以做整個大宜蘭的柑橘文化地圖,然後把整個農特產品都做一個整合。”
成功將在地農產加工成產品,甚至還在國際上取得好成績,不僅增加了附加價值,也讓宜蘭風味被世界看見。
