Culinary arts seniors make their very own graduation banquet

It’s almost graduation season. In Taiwan, students usually treat their teachers to a graduation meal or banquet. But instead of spending money on a fancy restaurant, a group of culinary management students have put together their very own graduation buffet-style banquet. They’ve incorporated local Tainan ingredients and drew inspiration from local cuisine, and made their teachers truly proud of their growth and accomplishments.

A roast beef carving station and baked veggies for the side—this buffet-style banquet has all the must-haves. But this isn’t your average hotel buffet. It’s the graduation banquet of culinary management students at Chang Jung Girls’ High School in Tainan.

Two students expertly work the shaker while they make mocktails, served with plum fruits as garnish. There’s also shaved ice, topped with a specially made syrup. The students have unleashed their creativity and skills for this feast.

What the school teaches is more basic, but there’s a wide array of dishes served at the graduation banquet, truly comparable to any five-star hotel buffet.

There’s also an assortment of desserts and ready-made waffles. Most dishes incorporate local Tainan ingredients, making for a diverse but localized menu.

Tainan has always been the food capital. Our students have adopted local ingredients and drew inspiration from local cuisine. We teachers can truly appreciate their hands-on efforts and witness their growth.

The students started prepping in the morning. I’m really touched. I couldn’t stop helping myself to one plate after another. But when I’m ready for a second round, everything’s been snapped up already.

Students have put together a feast that not only impresses the teachers, but also make themselves proud. Everything they’ve learned over the past three years is distilled at their graduation banquet.

餐飲科謝師宴搬進校園 "歐式Buffet"超澎湃

進入六月畢業季,台南長榮女中餐飲科學生,發揮三年所學,把謝師宴搬進校園,以歐式Buffet的形式,利用台南府城在地農產品,巧手變出傳統小吃、創意料理等,這充滿感恩的畢業成果展,可說完全媲美五星級飯店的菜餚。

現切烤牛排,一旁還有時蔬熱沙拉,民眾排隊等夾菜。這Buffet場景不在飯店,是台南長榮女中餐飲科師生,在校內舉辦的謝師宴。

架式十足搖晃雪克杯,在杯中加入梅子,完成創意飲品。還有透心涼的剉冰,當中配料是學生親手熬煮,展現學習成果。

玻璃櫃裡,琳瑯滿目的甜點,還有現做鬆餅。謝師宴搬進校園,以"台南風味"為主題,選用在地農特產入菜,讓府城食材,在餐桌上變幻不同風貌。

“台南本身就是一個美食之都,我們就把台南的在地食材,或者是在地料理,就希望同學可以融入進來,真正動手這樣做出來,老師都吃到這種溫度,跟看到他們的成長”

“(學生)從早上就開始備料,我非常非常的感動,一盤接著一盤吃,我後來要第二輪的時候,菜就已經被吃完了”

學生把對老師的感謝,化做一道道佳餚,畢業前夕,用最真誠的手藝,為三年的校園生活,留下滿滿感恩。
