Diplomats teach how to make Polish dumplings

"Taste of Europe" is a video series in which diplomats stationed in Taiwan cook dishes from their home countries. In a recent episode, the director of the Polish Office Taipei teaches viewers how to make Polish dumplings. Let’s take a look.

Polish Office Taipei Director Cyryl Kozaczewsk and Slawomir Giletycz, an assistant professor at National Central University, introduce the ingredients needed to make Polish dumplings. The ingredients include sauerkraut, dried mushrooms, onions, oil, spices and herbs, sugar, bay leaves, allspice, pepper, flour, and hot water.

In Poland, we make the dough for dumplings. You actually make it. So, we would like to show you how you make it.

The first step is to make the dough by mixing flour and warm water.

In some homes, they prepare the dough with eggs, but my mother told me we’re preparing with flour and water, and it’s fine.

After that, spread the dough. Then use a glass to create a mold for the dumplings, and prepare the fillings by cutting the onions, mushrooms, and sauerkraut.

We try to keep them as fine as possible because it’s better for the filling. The finer the material of the filling, the better it is to stick it later. Also, I chopped a bit of sauerkraut because sometimes it can be long.

Then, fry the fillings till they’re brown. After that, add a bit of salt and pepper.

Add a little bit of salt and pepper because later all the flavor will go to the dough out to the water when it’s fried.

In most of the Polish houses during the Christmas Eve supper, dumplings with sauerkraut and mushrooms, one of the principal dishes.

Add the fillings into the dough. After that, add sour cream and pork onto the dumplings, and the dish is ready to be served. Representatives from 15 EU member states teach viewers how to make authentic European dishes from their home countries.

歐洲經貿辦事處聯手歐盟會員國駐台代表推出最新影集”品味歐洲”,總共15集的內容,每周五都會有一位代表介紹家鄉好滋味. EP15 由波蘭臺北辦事處 Cyryl Kozaczewsk 處長和國立中央大學的 Sławomir Giletycz 助理教授跟大家分享這道酸酸鹹鹹的波蘭國民美食:餃子。

"在波蘭,我們會自己做餃子皮。因為我們都自己做,所以也想示範給大家我們怎麼做的。"

第一步是混合麵粉和溫水來製作麵團。

“在某些家庭,他們會在麵團中打入蛋,但我母親教我的是只需要用麵粉跟水。"

之後桿開麵皮。然後用玻璃杯的杯口切出餃子皮的形狀,接著切洋蔥、蘑菇和酸菜來準備餡料。

我們盡量把他們切碎一點,這樣餡料比較好。餡料切得越細碎,越容易合在一起。我也切了一些酸菜,因為有些酸菜會比較長。

然後,將餡料煎到焦棕色。之後,加入少許鹽和胡椒粉。

將餡料加入麵團中。在餃子上加入酸奶和炸培根,這道菜就可以上桌了。15個歐盟成員國的代表,在"品味歐洲"中輪番上陣,介紹如何製作家鄉好味道。
