Taiwanese pastry chef for French president earns acclaim

Pastry chef Hsing Lun-hy is the first Taiwanese to ever be hired as a resident chef in France’s presidential palace. After working there for nearly nine years, he was promoted to head pastry chef last year. Chasing his dream, he was younger than 30 when he first submitted his application to work there. In May this year, U.S. President Joe Biden even asked to meet the chef behind his delicious dessert.

Taking the Elysee Palace as inspiration, Hsing Lun-hy from Taiwan has worked as a pastry chef at the seat of the French presidency for over nine years. Last year, he was promoted to head pastry chef.

This was also taken from a part of the palace building. I isolated this decorative element and made it into a chocolate tart.

When Hsing was in high school, he studied data processing. It wasn’t until after graduating that he fell in love with desserts, but he didn’t have money to pursue it. He first entered the military and saved up enough money to go to France to study. He eventually applied to work in the Elysee Palace, and has now even met the French president himself. In May, he even won over U.S. President Joe Biden with his creations.

I found out that Biden really likes ice cream and things with pistachio. For the dessert that day, I combined these things and presented them in his dessert. He liked it a lot. He asked the president who made the dessert that afternoon.

Getting recognition from visiting dignitaries is what brings him the most happiness. Now 38, Hsing with his wife, two sons, and daughter all live in France. But when at home, they’re sure to speak Taiwanese.

We can’t let this language disappear. Even though they’ll speak French with us when they come home, we’ll sometimes use Taiwanese back.

Without ever forgetting his roots, this son of Tainan and lover of pastries is making a name for himself in France.

來自台灣的甜點師行倫邑,是全台第一人在法國總統府擔任御用甜點師,目前工作已經九年多,在去年升為甜點主廚,為了朝著夢想邁進,當年不到30歲的他,可是勇闖法國總統府遞履歷,今年五月還用甜點,讓美國總統拜登想要認識他。

“那這款是其實是由總統府裡面有一個它的天花板,就是你看這個上面,它就是由這個靈感去來的”

把法國總統府當作靈感,來自台灣的行倫邑,在法國總統府擔任甜點師九年多,去年風光升為"御用甜點主廚"。

行倫邑高中時,在台灣唸資料處理專業,畢業後才愛上甜點,想進修但沒有錢,所以先投身軍旅,存到旅費後到法國學藝,甚至帶履歷勇闖總統府應徵,最後被法國總統親自面試,今年五月還用甜點,征服美國總統拜登的胃。

“之後我才知道拜登很喜歡冰淇淋,他可能特別喜歡開心果之類的東西。當天甜點我是結合這一塊東西,這一方面的東西,去呈現在他的甜點裡面,他就非常的喜歡,他有問總統說,中午的甜點是哪一個人做的”

被外賓誇獎好吃,就是他最開心的時刻,今年38歲的行倫邑,與太太育有二子一女,全家人在法國生活,在家都堅持與孩子講台語。

“不可以讓這個語言去消失,雖然說他們回家也是會跟我們講法文,但是有時候我們就是會台語去回答這樣子”

帶著不忘本的精神、還有對糕點的熱愛,來自台南的孩子,在法國闖出一片天。
