Fishers, restaurants join up to host invasive fish banquets

In recent years, Sun Moon Lake has become overrun with invasive species of fish. The three worst culprits are giant snakehead, red devil cichlid, and jaguar cichlid. Local fishers and restaurants have joined forces to create banquets using these invasive fish. The chefs make them into all kinds of different dishes, in the hopes that tourists can help eradicate these unwelcome visitors.

The crackling oil turns the skin a crispy golden yellow, enveloping plump pieces of fish meat. They look like chicken tenders, but they’re actually Sun Moon Lake’s No. 1 killer, the giant snakehead.

There’s also a roiling wok of fish head soup. With fresh veggies and hot pot add-ins, it’s ready for the table. Just looking at it makes you full. The fish the chef used for this one is another Sun Moon Lake tyrant: the jaguar cichlid.

Since snakehead has a tender texture, it’s suitable for three-cup dishes, braising, or in hot pot. There are of course many kinds of invasive fish, so we’ll adjust the menu based on customer suggestions.

Sun Moon Lake has become oversaturated with invasive fish in recent years. Local restaurants and fishers have started working together to create meals using the unwelcome species. Apart from snakehead and jaguar cichlid, the third worst culprit is the red devil cichlid, which can be served steamed.

Red devil cichlid meat is extremely fine. Since there are already so many of these invasive fish in Taiwan, the best way to get rid of them is by eating them.

The one that surprised me is snakehead. The texture is a bit like dried anchovies, with a bit of a bittersweet flavor.

Sun Moon Lake hopes to eradicate these three pests. Fishers are doing their part to catch them, while travelers are responsible for eating them. By enjoying a good meal, you can also help to protect the lake’s ecosystem.

日月潭除三害 釣客.餐廳聯手推"外來魚種宴"

日月潭近幾年來,出現不少外來魚種危害生態,主要三害包含魚虎、紅魔鬼及珍珠石斑,有當地漁民和餐廳業者,聯手推出「外來魚種宴」,透過各種料理方式,將外來魚種變成美食上桌,也希望讓遊客用"吃的",幫忙消滅這些潭中的不速之客。

油鍋滋滋作響,將魚表皮炸得金黃酥脆,飽滿炸魚肉,外表像是雞柳條,但牠可不一般,是日月潭的頭號殺手"魚虎"。

還有一整鍋的砂鍋魚頭,在鍋中翻滾,搭配青菜、火鍋料,端上桌,光用看的就很飽,這使用的魚,同樣是日月外來惡霸-珍珠石斑。

“魚虎因為肉質Q彈軟嫩,所以(適合)做三杯或紅燒,或魚片火鍋之類的,當然還有很多外來魚種,所以都會視顧客的想法來做調整。”

日月潭近幾年來飽受外來魚種侵襲,當地餐飲業者,和釣客合作,聯手推出「外來魚種宴」,除了魚虎、珍珠石斑,同樣也是日月潭三害之一的"紅魔鬼",也採清蒸方式,料理上桌。

“紅魔鬼的肉質真的非常細。對於這些外來魚種,既然在台灣已經這麼多了,所以最好的方式,就是用吃的把牠消滅。”

“讓我比較意外的就是小魚虎,吃起來有點像小魚乾的口感,有一點點的苦甘苦甘的味道。”

日月潭要除三害,釣客想盡辦法讓魚上鉤,遊客負責吃,一邊享用美食的同時,也幫忙消滅了外來魚種,一舉兩得。
