Tainan schools track leftovers to reduce food waste

Schools across the nation have been trying to reduce food waste now that leftover food can no longer be used as pig feed due to Taiwan’s African swine fever outbreak. Tainan’s Department of Education aims to reduce food waste by 8% in three months, encouraging students to finish their meals and requiring schools to track leftovers and plan meals more precisely.

We assign one person to keep track of students’ leftovers every day. Then the students give us feedback through a survey, and we adjust the amount of food allocated to each class based on the students’ needs.

We also asked nutritionists to change the food they prepare and reduce foods that are commonly left over. We now use a precise amount of ingredients and meal preparation system.

In response to local government policies, schools are making sure to prepare meals that students enjoy. By tracking food consumption and providing food that students like, they are quickly reducing their food waste.

拚減營養午餐廚餘 南市教育局訂3個月減8%推"完食教育"

受非洲豬瘟疫情影響,學校廚餘不能再用來餵豬,要如何減少營養午餐的廚餘量,成為各縣市教育局的課題。台南市教育局就訂出每3個月要減少8%的目標,鼓勵學生把營養午餐吃完,同時也要營養師減少高廢棄率的菜單,統計剩食,精準備餐。

中午用餐時間,小朋友排隊夾取營養午餐,這一餐有菜有肉,還有五穀飯,小朋友幾乎都吃光光。

午餐吃光光,就代表廚餘量減少,整個白板上,紀錄著每個班級剩下的飯菜量。

“派一位廚媽每天觀察一下學生回來的廚餘量,然後我們再透過分量的調查表,學生會給我們一個回饋,就依照學生的情形,每個班的供應量去做一個加減量”

統計剩食,為的是精準掌握每個班級小朋友的食量,但若掐得剛剛好,萬一份量不夠,怎麼辦?

“鄰近班級之間的一個班級互相支援,吃的不夠的,我們就會找鄰近的班級,來做一個支援,那這樣子減少我們的廚餘的量”

台南各國中小學積極推動「吃光光」食育教育,因為最近非洲豬瘟疫情影響,學校廚餘沒有人收,如何減少廚餘量成了一大課題。
