Restaurant fuses Italian, Sichuan cuisine with mapo tofu lasagna

Italian food can also incorporate elements of Sichuanese cuisine! One restaurant in Taipei makes a classic lasagna, but swaps out the meat for numbing and spicy mapo tofu. They also make a spicy “wonton” from ravioli. But how does it taste? Let’s find out...

Why does this lasagna have a numbing flavor to it? That’s because the chef merged Italian lasagna with Sichuanese mapo tofu.

The mince is made with soybean paste and spicy oil, heat over flame to bring out its flavors.

A cream sauce is spread onto every sheet along with a layer of mapo tofu and a sprinkling of cheese. The layers stack up, topped with two large blocks of tofu.

Into the oven it goes to bake until golden brown. Then it’s ready for the final touch of chili oil and numbing pepper.

You can’t put weight on top of soft tofu. It falls apart as soon as you cut it. This is something we still need to figure out.

They also make a spicy “wonton” dish with ravioli. The filling has sausage and prosciutto in addition to pork.

Salty anchovies are added to a hot pan along with chili oil and chili powder. Its spiciness hits the nose immediately.

Sautéing the ravioli allows the sauce to soak in. The finishing touch is a garnish of breadcrumbs and basil.

For the Italian part we add chorizo and prosciutto to make the Italian flavors really jump out.

Their classic pasta is also merged with spicy beef noodles and topped with German sauerkraut to create a fusion of Italian and Sichuan cuisine. It really puts a new twist on some old classics.

義大利千層麵,怎麼有花椒香氣?原來是把義式千層麵,結合川菜的麻婆豆腐。

豆瓣、油潑辣子炒的肉醬,高溫喚醒香氣。

義大利麵,抹上一層白醬、一層麻婆豆腐,再撒上滿滿起司,來回堆疊,還要放上兩塊大的板豆腐。

送入烤箱,烤到外皮金黃,並點綴辣油、花椒粉。

“像嫩豆腐那些的,它是不容擠壓的,所以一切就散了,所有我們在這上面需要去做克服。”

義大利麵餃也變身紅油抄手,內餡除了豬肉,還有義式香腸、生火腿。

大火爆香加入鹹香鯷魚,還有紅油、辣椒粉,香辣滋味撲鼻而來。

麵餃來回翻炒,吸收湯汁,最後用麵包粉、羅勒劃下句點

“因為我們這個義式裡面會加了,像西班牙香腸,還有加那個義式火腿,所以它的那個義式風味,會再跳出來。”

義大利麵也能變身辣味牛肉麵,還加入德國酸菜,義大利麵結合川味,中義混血增添新意。
