Taipei restaurant serves seafood ramen from giant block of ice

In this hot weather, one ramen shop in Taipei had the idea to drill a hole in a block of ice to use as a bowl, making the chilled noodles extra refreshing and springy. Let’s find out how it tastes...

Cold noodles are nestled in a block of crystal-clear ice. The noodles, steeped in a bonito broth, become springier where they touch the ice. To keep it from getting too watery as the ice melts, they provide extra bonito soy sauce to bring out the sweetness of the scallops and shrimp.

The noodles are cooked evenly at a high temperature.

Then they’re washed gently in cold water. They go through this process three times, ending with an ice bath.

Then they’re placed in an ice block with the bonito broth. After topping it off with shiso, scallops, octopus, shrimp, and sea urchin, it’s ready to eat.

We first thought about putting ice cubes in it. But the coolness and look wouldn’t have as much of an impact as with a whole block. So then we considered buying a large block of ice and making a hole in the middle.

When you’ve finished the noodles, you can wash off the ice and drink cola out of it. Or you could try these tomato shrimp dipping noodles. It also comes with bread to dip in the soup.

These al dente noodles also go through the hot’n’cold treatment.

They’re topped with sizzling slices of pork and a pesto sauce.

A stock made from lots of shrimp is slowly boiled to bring it to the desired consistency.

The soup has some tomato in it. It’s a little Western for the Japanese taste, so on the noodles we add a bit of pesto.

In the sweltering summer heat, there’s nothing better than eating cold noodles, especially when they’re in an entire block of ice.

冰磚冷麵! 柴魚高湯襯托海鮮甘甜 麵條口感超Q彈

天氣熱,台北有拉麵店,把冰磚中間開洞,變成容器,經過冰鎮的麵條,吃來清涼,口感更Q彈,味道如何一起去品嘗。

晶瑩剔透的冰磚裡藏了冷麵,吸收柴魚高湯的麵條,碰到冰磚變的更Q彈,就怕冰塊融化味道變淡,還多了一管柴魚醬油,襯托出干貝、蝦子等海鮮的甘甜。

細麵下鍋,高溫均勻煮熟麵條。

送入冷水輕輕搓洗,來回總共三次,最後一次還要泡冰塊浴。

麵條放進冰磚裡,倒入清爽的柴魚高湯,鋪上紫蘇葉、干貝,還有章魚、蝦子和海膽,就能上桌。

“原本想說丟冰塊下去,涼度或者是視覺上的衝擊性啊,又沒有整塊的冰塊,來得那麼的衝擊,所以我們就想說,去買比較大的冰塊回來,然後把它中間把它開洞”

吃完冷麵,還能把冰磚沖一沖,變成杯子裝可樂。再品嘗番茄蝦沾麵,除了麵條,還能用烤麵包沾醬吃。

帶有嚼勁的粗麵,同樣經過冷熱三溫暖。

放上炙燒叉燒,還點綴青醬。

大量蝦子熬煮的蝦湯,還要慢慢加熱,調整到師傅要的濃度

“湯汁裡面有加了一些番茄,那它的感覺還蠻比較,日本人講比較洋風的,所以說我們就會在麵上面,加個青醬”

熱熱吃的拉麵,結合冰磚變清涼,一掃夏天炎熱。
