Cafe serves up pineapple iced americano and pistachio basque cheesecake

A newly opened café in Taipei’s Zhongshan District serves up pineapple iced Americano, house-roasted coffee beans, and pistachio Basque cheesecake. Behind the concept is a 27-year-old whose love for coffee led him to spend three years honing his craft at various cafés before launching his own in May. FTV reporter Stephany Yang sat down with the founder, Beau Chang, to learn more about his journey.

Preheat oven to 220°C, then, beat cream cheese and sugar. After that, add the eggs and mix them together.

Add the ground pistachios, flour, and salt. Finally, it’s time to bake for 18 minutes.

I use maybe 220°C to bake for almost 18 minutes so it can bake a smooth texture. For step one, I use the cream cheese, add sugar to put it together. And then, add egg and also a little powder. Also, add pistachio cream and also mix it to very smooth.

Nestled in Taipei’s Zhongshan District, the store was founded by Beau Chang. Chang graduated from college with a degree in Landscape and Recreation from the National Chung Hsing University, but due to his passion for coffee, he decided to spend three years honing his craft at various cafés before launching his own this May.

After I graduated, I start to work at a coffee shop and I also learned lessons outside or studied books, and videos on YouTube or another place. I found that I was interested in coffee and I wanted to create my coffee shop. So I decided to open my coffee shop.

The store is not only known for its pistachio basque, but also for its in-house-roasted beans, hand-poured brews, and cold brews. One highlight is its pineapple iced Americano.

I also roast my coffee beans by myself. I want to help people when they want to drink coffee at home, they can make the coffee easier so I created the cold brew bag so people can very simply to make good coffee when they want to drink, they also can put the cold brew bag into the water and can get easier coffee at home.

Other popular dishes include curry rice and egg salad buns. Chang hopes to create a cozy environment for people to enjoy desserts, meals, and high-quality cold brews.

台北中山區新開了一家咖啡店,主打鳳梨冰美式、自家烘焙咖啡豆,以及開心果巴斯克乳酪蛋糕。這間店的創辦人是一位27歲的年輕人,因為熱愛咖啡,花了三年時間在各家咖啡館磨練技藝,終於在今年五月創立了自己的品牌。

將烤箱預熱至220°C,然後攪拌奶油乳酪和糖。之後,加入雞蛋並攪拌均勻。

再來加入磨碎的開心果、麵粉和鹽。最後,烘烤18分鐘。

"我使用大約220°C烘烤約18分鐘,烘出滑順的口感。第一步是將奶油乳酪與糖混合在一起,接著加入雞蛋和少量麵粉,再加入開心果醬,充分攪拌至非常滑順的質地"

這家店坐落在台北中山區,創辦人是張之勁。張之勁畢業於國立中興大學,獲得國立中興大學景觀與遊憩學位。出於對咖啡的熱愛,他決定在不同的咖啡館磨練三年,然後在今年五月開了自己的咖啡店。

"畢業後,我開始在咖啡店工作,同時也在外面上課、閱讀書籍,並透過YouTube或其他平台觀看影片學習。我發現自己對咖啡非常有興趣,想開一家屬於自己的咖啡店。於是我決定創業,開設自己的咖啡店"

除了開心果巴斯克,店內還有自己烘焙的咖啡豆、手工沖泡的咖啡和冷萃咖啡。其中一大亮點是鳳梨冰美式咖啡。

"我也會自己烘焙咖啡豆。我希望幫助在家想喝咖啡的人,能更輕鬆地沖泡咖啡,因此設計了冷萃咖啡包,大家只要簡單幾個步驟就能沖出好喝的咖啡。只需將冷萃咖啡包放入水中,就能輕鬆在家享受美味咖啡"

其他受歡迎的菜色還包括咖哩飯和雞蛋沙拉三明治。張之勁希望營造一個舒適的環境,讓客人可以享用甜點、餐點和高品質的冷萃咖啡。
