Famous seafood stall strives to revitalize night market

You can’t speak of Taichung’s night markets without mentioning the Zhonghua Road Night Market, which has been bustling since the 1960s and 70s. Among the market’s impressive array of delicious food vendors, one is famous for its fried crab and shrimp, as well as its variety of stir-fried dishes. The owner also serves as chair of the vendors’ association, working hard to restore the night market to its former glory.

A chef fries crab legs and shrimp in a sizzling pot of oil. He adds fresh basil and flash-fries the ingredients with the practiced skill of many years.

After seasoning with black pepper, chili pepper, and a special blend of spices, this piping hot seafood dish is ready to serve.

- It’s very flavorful. The fried garlic is especially tasty.

- Their spices have a unique flavor and tastes great with garlic.

- I’ll buy it whenever I’m passing by. The crab is fried on the spot and has lots of meat.

All kinds of fresh seafood are on display at this food stall, which has been satisfying customers at Taichung’s Zhonghua Road Night Market for over 20 years.

For stir-fried dishes we mainly use shacha sauce, and for fried dishes we mainly use salt and pepper. The ingredients must be fresh, and the oil must be new. We insist on this.

Liao makes sure that his food is of the highest quality, even if it is only a roadside stall. Witnessing the night market’s highs and lows over the last few decades, he is committed to restoring it to its former glory.

I’ve been on Zhonghua Road since I was 18 and witnessed the rise and fall of the night market. There’s one phrase that has always stuck with me: Vendors need to adapt and change, so that the glory of the Zhonghua Road Night Market can be restored.

Liao also serves as chairman of the Taichung Vendors’ Association, guiding the vendors of Zhonghua Road Night Market to keep moving forward. He strives to revitalize the night market so that they can continue to prosper.

台中老字號夜市炸炒海鮮飄香 老闆斜槓攤販理事長

說到台中市夜市商圈,不得不提老牌的中華路夜市,在六七十年代是極熱鬧的商圈,美食不勝枚舉,當中有一家專賣海鮮美食攤位,專攻炸螃蟹,炸蟹腳,炸蝦等生猛好料,業者還加入現炒烹調豐富選擇,而老闆同時肩負攤販理事長一職,他的使命就是希望讓中華路夜市風華再現。

蝦子、蟹腳,下到熱油鍋中,瞬間滋滋作響。放入九層塔,迅速過油酥炸,帶出香氣。

緊接著重點來,胡椒粉、辣椒粉以及特殊調配的香料,快速翻攪香氣四溢。

-很夠味,裡頭蒜炸起來,非常香

-他們家胡椒鹽味道很特別,配蒜頭吃,很好吃

-有路過就會買,現炸的螃蟹肉,還蠻飽滿的

攤位各式生猛海鮮擺得滿滿滿,台中市老牌夜市商圈,中華路觀光夜市,炸炒海鮮飄香二十載。

"現炒的話,我們也是以沙茶為主,炸的話我們已椒鹽為主,食材新鮮,然後油要新油,這是堅持的問題"

廖老闆對於料理有所堅持,即使只是路邊攤,品質絕對到位。而在中華路夜市打滾數十年的他,看著夜市興衰,心裡有感觸,更有一份使命感。

身兼台中市攤販協會理事長的廖老闆,帶著中華路夜市攤商往們前衝,力拚重新擦亮老夜市招牌,續寫他們的夜市人生。
