
When discussing the Netherlands, most people think of windmills and tulips. But do you know what Dutch cuisine is like? One local restaurant is offering a full Dutch menu of dishes straight from the 17th century, like beef stew with onions and mashed potato, and bitterballen. For dessert, try poffertjes with berries. Now you can taste the authentic flavors of the Netherlands without having to travel abroad.
Piping hot mashed potatoes are spread onto a plate, the chef using a spoon to create a well in the center for the beef stew. Add some frisee and parsley for garnish, and this classic dish—passed down from the 17th-century golden era of the Netherlands—is ready to serve. These bitterballen are also from that time. Minced beef and mashed potato are pressed together and fried into golden balls, crispy on the outside and juicy on the inside.

There’s Bavarian white sausage and another sausage with bacon. But this mashed potato has kale in it. It’s my first time trying it.
If it’s your first time trying Dutch food, you can’t miss poffertjes for dessert. Each miniature pancake is pan-fried to perfection, powdered with sugar and topped with berries before finally adding a scoop of vanilla ice cream drizzled with chocolate sauce and mint leaves, the sour and sweet flavors melding together. Also popular is the homestyle kale mashed potatoes with sausage, considered the most representative dish of the Netherlands.

Personally I am in favor is this one, which is the mashed potatoes with sausage. It’s a very Dutch dish which we normally have in wintertime. It’s a bit cold and raining. That’s my favorite. But also the bitterballs, which are in the corner. Meatballs which are very favorable if you drink beer. In Dutch cafes and restaurants in the afternoon, you will find a lot of people drinking beer and having bitterballs.

When making the menu, we first looked for dishes ourselves before asking a Dutch chef to taste-test them. We then spent two to three months refining the seasonings and recipes to ensure they taste authentically Dutch.
The head chef spent months getting everything just right in his mission to bring authentic Dutch food to Taiwan, hoping to gastronomically transport his customers all the way to Europe.

薯泥加熱後放進盤中,用湯匙挖成碗狀,再放入燉牛肉,最後擺上綠捲生菜、撒上巴西里,這道「傳統荷蘭洋蔥燉牛肉佐薯泥」,是從17世紀,荷蘭黃金時代所傳下來的家常料理。這道牛肉馬鈴薯球,也是其一,牛絞肉與薯泥混合成球狀炸至金黃,外酥內嫩,入口爆汁。

初次品嘗荷蘭料理,絕不能錯過甜點「荷蘭莓果小鬆餅」,一顆顆迷你鬆餅烤得金黃微脆,撒上糖粉、綜合莓果,再放上一球香草冰淇淋,最後淋上巧克力醬、薄荷葉,口感酸甜交織。另外受歡迎的還有「鄉村風羽衣甘藍薯泥配香腸」,也堪稱是荷蘭代表性料理。

“我個人特別喜歡這一道,馬鈴薯泥配香腸,這是一道非常經典的荷蘭料理,通常在冬天享用,天氣冷又下雨的時候最適合,另外我也很喜歡一旁的,比特伯倫牛肉馬鈴薯球,這是一種油炸肉球,非常適合搭配啤酒,在荷蘭的咖啡館或餐廳裡,下午時段常能看到許多人,邊喝啤酒邊享用”

“餐酒搭配這一塊,我們有一個概念是地酒配地食。我們在做荷蘭菜的時候,我們有發現他們有使用大量的馬鈴薯,在馬鈴薯上面有千變萬化”

“在找這些菜的時候,我們是自己找完,然後再請荷蘭當地的主廚,然後過來幫我們試吃,然後在調味跟調整,大概花了兩、三個月的時間,盡量讓他符合道地荷蘭的口味”
為了將道地的荷蘭口味帶到台灣,主廚花上數月時間調整比例配方,就是要讓民眾透過味覺,感受到濃濃的荷蘭風情。
